The concertina album is a great structure for such a situation. It’s simple and can be a clean solution to your conundrum. It’s also a great way to bind single sheets, when your pages aren’t big enough to fold over for sewing. Bring some small items you’d like to include in the books we’ll make and you’ll get an idea for just how many possibilities this binding can offer.
